So, I buys me some tortillas today, and they’re about $3. There’s six of them. $.50/tortilla. That’s $1/each for my laziest food, quesadillas, without counting the smoked jack from Trader Joe’s or the miscellaneous vegetable matter (usually outta the garden.)
No way, José.
Well, anyway, I decided it was time to make my own. Given that there’s about $.25 of flour in a small batch of 6, that’s a nice discount. But, as always, the difference is in taste. Good God Almighty, freshies are good.
The recipe was something like this (I pretty much made it up, cuz I don’t like/have lard, and it seemed that the recipes followed some basic ideas.)
2 c. AP flour
1 tsp salt
1 tsp baking powder (no es autentico, but then I’m from North Dakota)
2 tbsp olive oil (see above)
1/2 c. buttermilk
1/2 c. hot water
I mixed the dry stuff in a bowl and then mixed in the oil by hand. Then I mixed hot water (from my coffee machine) into cold buttermilk (from the frig) and poured that into the flour mixture. I made that into a stickyish dough and let it rest for 10 minutes. Then, I took that out and kneaded it 15 times or thereabouts until it wasn’t sticky, smeared a little olive oil on it and let that rest for another 20 minutes or so.
Finally, I cut that ball into 6 pieces that I rolled out as flat as I could (a little flour here and there). They came out about 8″ across or so and maybe 1/8″ thick. On a medium hot, dry cast iron skillet, I plopped the tortilla down until it bubbled a bit, flipped it over until it was brown on that side, and then finished on the original side until it puffed and browned a bit.
I don’t think I’d gotten to the second one when wifey’d already scarfed one with butter and declared it a success: “Oishii desu.”
